Taverna Style Grilled Lamb

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb lamb, diced
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 lemon, zest of
  • 2 tablespoons olive oil
  • salt & freshly ground black pepper, to taste
  • 7 ounces feta cheese, sliced
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, zest of
  • 1 lemon, juice of
  • 1/2 small red onion, finely sliced
  • 3 tablespoons olive oil

Recipe

  • 1 mix together the marinade ingredients and add the lamb cubes. toss well and then skewer meat onto 4 metal skewers (broiler) or 4 wet wooden skewers (open fire).
  • 2 arrange the sliced feta on a large serving dish and sprinkle over the herbs, lemon zest and sliced onion. drizzle over the lemon juice and olive oil and season with salt and pepper.
  • 3 cook the lamb skewers under a preheated hot broiler for about 6-8 minutes, turning frequently, until browned and almost cooked through. do the same for an open fire. remove from heat and leave to rest for 1-2 minutes.
  • 4 serve the lamb with the salad along with plenty of crusty bread, if desired.
