Rutabaga Casserole

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • 2 medium rutabagas (about 2 lbs)
  • 2 eggs, beaten
  • 1/4 cup dry breadcrumbs
  • 1/4 cup half-and-half
  • 2 teaspoons sugar or 2 teaspoons corn syrup
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter

Recipe

  • 1 dice rutabagas and cook by boiling 20 to 25 min.
  • 2 or microwave with 1/2 cup water for 15 to 18 minutes.
  • 3 mash rutabagas with reserved liquid.
  • 4 stir remaining ingredients except butter into rutabagas.
  • 5 pour into greased casserole and dot with butter.
  • 6 bake 45 to 50 minutes in a 350 degree oven until top is light brown.
