Spinach And Oyster/clam Dip

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped sweet red pepper
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 cup water
  • 1 -1 1/2 cup chopped fresh spinach
  • 1 (8 ounce) jar processed cheese with jalapeno peppers
  • 1 (8 ounce) can oysters, chopped, drained, rinsed (or minced clams equivelant)

Recipe

  • 1 in a saucepan, cook onion and sweet pepper in butter until tender.
  • 2 stir in flour, garlic powder andpepper.
  • 3 add water. cook and stir over medium heat until slightly thickened and bubbly. cook and stir for 1 minute more.
  • 4 stir in spinach and cheese. cook and stir until well blended.
  • 5 stir into cheese mixture, heat through.
  • 6 transfer to serving bowl.
  • 7 serve with tortilla chips, french baguette bread slices, etc.
