Spinach And Mushroom Cobb

Ingredients
- Servings: 4
- 1 onion, diced
- 2 cloves garlic, chopped
- 300 g mushrooms (any mixture you like, sliced)
- 300 ml sour cream (lite works fine)
- 2 cups baby spinach
- 1/2 cup grated cheddar cheese
- salt & pepper
- 1 loaf cobb round bread
Recipe
- 1 slice the top off the cobb.
- 2 pull out all the soft bread, leaving a shell.
- 3 in a frying pan, heat the olive oil over a low heat.
- 4 add the diced onion and garlic and saute gently.
- 5 add the mushrooms and cook until all the liquid evaporates.
- 6 add the sour cream and stir through.
- 7 season with salt and pepper.
- 8 simmer for a few minutes until it thickens slightly.
- 9 add spinach and stir through.
- 10 turn off heat.
- 11 pour the sour cream mixture into the cobb shell.
- 12 top with cheese and"lid".
- 13 tear the soft bready bits into bite size pieces.
- 14 put the cobb on a baking tray surrounded by bread bits.
- 15 bake in a moderate (180c) preheated oven for 10-15 minutes until bread is golden and cheese is melted.
