Tasty Bran Wheat Banana Muffins

Ingredients

- 1 1/2 cups ripe bananas, mashed (3 bananas)
- 1 cup buttermilk
- 1/2 cup brown sugar
- 1/2 cup wheat bran
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup pecans, chopped
Recipe
- 1 preheat oven to 375°f spray 6 big muffin tins (texas or jumbo size) and set aside.
- 2 mix first 6 ingredients together and set aside.
- 3 mix both types of flour, baking powder, baking soda and salt. make a well in the middle, and add banana mixture. stir until just combined, do not overmix.
- 4 fold the pecans.
- 5 divide the dough into the muffin tins. bake for 20 to 25 minutes or until a toothpick inserted in the middle comes out clean.
