Spinach And Jack Cheese Bread Pudding

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 6 large eggs
  • 1 pinch ground nutmeg
  • 2 cups milk
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 4 ounces monterey jack cheese, shredded
  • 1/4 teaspoon ground black pepper
  • 8 slices bread, cut into 3/4 inch pieces

Recipe

  • 1 preheat oven to 375º f. in large bowl, with wire whisk, beat eggs, milk, thyme, salt, pepper, and nutmeg until blended with rubber spatula. stir in spinach, cheese, and bread.
  • 2 pour mixture into 13" by 9" baking dish. bake bread pudding until browned and puffed and knife inserted in center comes out clean, 20-25 minute.
  • 3 remove breading pudding from oven, let stand 5 minute.
