Spinach And Jack Cheese Bread Pudding

Ingredients

- 6 large eggs
- 1 pinch ground nutmeg
- 2 cups milk
- 10 ounces frozen spinach, thawed and squeezed dry
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 4 ounces monterey jack cheese, shredded
- 1/4 teaspoon ground black pepper
- 8 slices bread, cut into 3/4 inch pieces
Recipe
- 1 preheat oven to 375º f. in large bowl, with wire whisk, beat eggs, milk, thyme, salt, pepper, and nutmeg until blended with rubber spatula. stir in spinach, cheese, and bread.
- 2 pour mixture into 13" by 9" baking dish. bake bread pudding until browned and puffed and knife inserted in center comes out clean, 20-25 minute.
- 3 remove breading pudding from oven, let stand 5 minute.
