Salmon With A Parmesan Crust

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 salmon fillets (you can also use cod)
  • 2 ounces fresh breadcrumbs
  • 1 tablespoon pine nuts, lightly toasted
  • 3 ounces parmesan cheese
  • 4 tablespoons fresh basil, chopped
  • 1/2 ounce butter
  • salt & freshly ground black pepper

Recipe

  • 1 place the breadcrumbs, pine nuts, basil, butter and parmesan in a food processor and pulse until just combined.
  • 2 place the salmon under a moderately hot broiler for 5 minutes
  • 3 turn the salmon over, top with the breadcrumb mixture and press the fillets down gently with the palm of your hand.
  • 4 cook for a further 5 mins or until the salmon is cooked through.
  • 5 serve with new potatoes and broccoli.
