Sarah's Fruit Loaf

Ingredients
- Servings: 6
- 1/2 cup sugar
- 1 teaspoon bicarbonate of soda
- 1 1/2 cups self raising flour (or make it sr with baking powder)
- 1 cup mixed dried fruit
- 1 tablespoon butter (can substitute with margarine)
- 1/2 cup boiling water
Recipe
- 1 mix sugar, fruit and bicarb in a mixing bowl.
- 2 melt the butter in hot water and add to mix, stirring well.
- 3 add the sr flour to the mix.
- 4 bake in a loaf tin at 180 for 35 minutes or until a skewer comes out clean.
