Sarah's Fruit Loaf

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1/2 cup sugar
  • 1 teaspoon bicarbonate of soda
  • 1 1/2 cups self raising flour (or make it sr with baking powder)
  • 1 cup mixed dried fruit
  • 1 tablespoon butter (can substitute with margarine)
  • 1/2 cup boiling water

Recipe

  • 1 mix sugar, fruit and bicarb in a mixing bowl.
  • 2 melt the butter in hot water and add to mix, stirring well.
  • 3 add the sr flour to the mix.
  • 4 bake in a loaf tin at 180 for 35 minutes or until a skewer comes out clean.
