Sarah's Spud Nuts Aka Doughnuts

Total Time: 2 hrs 2 mins Preparation Time: 2 hrs Cook Time: 2 mins

Ingredients

  • Servings: 48
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 3 eggs
  • 1 1/2 cups milk
  • 6 -7 cups flour
  • 1/4 ounce yeast
  • 1/2 cup warm water
  • 1/2 teaspoon salt
  • 1 1/2 cups instant mashed potatoes (made)
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 cup boiling water
  • 1 tablespoon margarine
  • 1 teaspoon vanilla
  • 1 lb powdered sugar

Recipe

  • 1 dissolve yeast in warm water. beat shortening, sugar and eggs. add the dissolved yeast to this mixture. add milk, spices and salt to this mixture and enough flour (between 6-7 cups) to make a soft dough. place in a greased bowl and covered and let rise until double in size.
  • 2 roll out on a lightly floured surface to 1/2 inch thick and cut into doughnut shapes. place on a greased sheet and cover - letting rise again until double.
  • 3 in the meantime mix up the glaze ingredients together.
  • 4 fry in hot oil until brown.
  • 5 place on a wire rack with a piece of parchment underneath and glaze.
