Sarah's Spud Nuts Aka Doughnuts

Ingredients
- Servings: 48
- 1/2 cup shortening
- 1/2 cup sugar
- 3 eggs
- 1 1/2 cups milk
- 6 -7 cups flour
- 1/4 ounce yeast
- 1/2 cup warm water
- 1/2 teaspoon salt
- 1 1/2 cups instant mashed potatoes (made)
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup boiling water
- 1 tablespoon margarine
- 1 teaspoon vanilla
- 1 lb powdered sugar
Recipe
- 1 dissolve yeast in warm water. beat shortening, sugar and eggs. add the dissolved yeast to this mixture. add milk, spices and salt to this mixture and enough flour (between 6-7 cups) to make a soft dough. place in a greased bowl and covered and let rise until double in size.
- 2 roll out on a lightly floured surface to 1/2 inch thick and cut into doughnut shapes. place on a greased sheet and cover - letting rise again until double.
- 3 in the meantime mix up the glaze ingredients together.
- 4 fry in hot oil until brown.
- 5 place on a wire rack with a piece of parchment underneath and glaze.
