Southern Cornbread Muffins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 3/4 cups buttermilk
  • 1 egg, beaten
  • 2 tablespoons butter or 2 tablespoons margarine, melted

Recipe

  • 1 combine cornmeal, four, sugar, salt, and baking soda in a large bowl, mixing well.
  • 2 combine buttermilk, egg, and butter, mixing well.
  • 3 add to dry ingredients stirring just until moistened.
  • 4 spoon into greased muffin pans. bake at 425 for 15 minutes or until edges begin to brown.
  • 5 yield is 1 dozen regular muffins or 6 texas sized.
