Spicy Lemon Potatoes Sandwich

Ingredients
- 1 (20 ounce) package simply potatoes diced potatoes with onion
- 4 whole wheat pita bread
- 1 cup diced fresh carrot
- 1 cup cauliflower floret
- 1 cup peas
- 1 teaspoon cumin seed
- 1 cup sliced red bell pepper
- 1/2 cup lemon juice
- 1/2 cup goat cheese (grated)
- 1 teaspoon red chili powder
- 3 tablespoons butter
- 1 cup chopped tomato
- 1/2 cup chopped onion
- salt and pepper
Recipe
- 1 steam carrots, cauliflower, peas until soft and mash them with a help of potato masher leaving some chunks.
- 2 in a pan heat butter, add cumin seeds and saute onions.
- 3 add red bell peppers, tomotoes, steamed vegetables and simply potatoes diced potatoes with onion.
- 4 cook for 5 mins until it is well blended.
- 5 now add chilli powder, salt and lemon and cook for another 5 minutes.
- 6 remove from the flame and garnish with cheese on top.
- 7 warm the pita bread.
- 8 use this as a filling in the pita bread.
- 9 serve hot.
