Tomato And Chorizo Salad

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons olive oil
  • 2 chorizo sausages, sliced
  • 250 g cherry tomatoes, halved
  • 1 small red onion, cut into rings
  • 1 tablespoon sherry wine vinegar or 1 tablespoon red wine vinegar
  • 1 tablespoon chopped flat leaf parsley
  • lemon juice, 1 squeeze

Recipe

  • 1 heat a tiny amount of the olive oil over medium heat and cook the chorizo for 5 minutes or until crisp.
  • 2 place the chorizo, cherry tomatoes and onion rings in a serving bowl.
  • 3 whisk the remaining olive oil and vinegar together. pour over the ingredients in the bowl and toss well.
  • 4 sprinkle with the parsley and squeeze a little lemon over.
  • 5 good served with crusty bread to mop up the juices.
