turkey croquettes

Ingredients
- Servings: 4
- 2 cups cooked turkey, finely chopped
- 1 3/4 cups panko breadcrumbs, divided
- 2 tablespoons milk
- 1 1/2 teaspoons sage
- salt and pepper
- 1 egg
- 1/2 chopped onion
- 1/2 stalk celery, chopped
- 2 1/2 tablespoons oil, divided
Recipe
- 1 saute onion and celery in a drop of oil until softened.
- 2 set aside to cool slightly.
- 3 combine with turkey, 1/4 c panko, milk, sage, egg, salt, pepper.
- 4 refrigerate for 30 minutes until firm form into 12 patties, dredge in remaining panko.
- 5 heat half the oil in a saute pan, add 6 patties and cook 3-5 minutes per side repeat serve with cranberry sauce or leftover turkey gravy.
