Slow Cooker Chili Cook-off Chili

Total Time: 4 hrs 45 mins Preparation Time: 45 mins Cook Time: 4 hrs

Ingredients

  • 16 slices bacon
  • 1 lb ground turkey
  • 3 diced chipotle chiles in adobo (add more if you like a kick, less if you don't)
  • 1 large sweet onion, chopped
  • 3 garlic cloves, minced
  • 1 (15 ounce) can kidney beans (rinsed and drained)
  • 1 (15 ounce) can black beans (rinsed and drained)
  • 1 (15 ounce) can cannellini beans (rinsed and drained)
  • 1 cup frozen corn
  • 2 teaspoons dried basil
  • 1 tablespoon sage
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon packed brown sugar
  • salt and pepper

Recipe

  • 1 pan fry bacon (not too crispy!).
  • 2 lay bacon out on paper towels to absorb fat.
  • 3 cook ground turkey in bacon fat until no longer pink
  • 4 remove cooked turkey from pan with slotted spoon and put in slow cooker.
  • 5 cut bacon into 1" sections and add to turkey in slow cooker.
  • 6 add onion, garlic, chipotle pepper and adobo sauce to bacon and turkey fat and cook until onion is almost transparent (still has some crunch).
  • 7 add onion mixture to slow cooker and mix.
  • 8 add beans to slow cooker and mix.
  • 9 cook chili for 4 hours on high or 7 hours on low.
  • 10 1 hour before finished add corn, worcestershire sauce, brown sugar and spices to chili.
  • 11 serve warm with your favorite cornbread!
