Spinach Bread Pudding

Ingredients
- Servings: 6
- 6 eggs
- 2 cups milk
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt and pepper
- 1 pinch nutmeg
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 cup low-fat jalapeno cheddar cheese
- 8 slices dense bread (cut into 3/4 inch pieces)
Recipe
- 1 heat oven to 375.
- 2 in a large bowl, whisk together eggs, milk, thyme, salt, pepper and nutmeg until blended.
- 3 stir in spinach, cheese and bread with rubber spatula.
- 4 pour into 13x9 baking dish.
- 5 bake 20-25 minutes, or until browned and puffed and knife inserted comes out clean.
- 6 remove from oven let stand 5 minutes before serving.
