Spinach Bread Pudding

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 6 eggs
  • 2 cups milk
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt and pepper
  • 1 pinch nutmeg
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup low-fat jalapeno cheddar cheese
  • 8 slices dense bread (cut into 3/4 inch pieces)

Recipe

  • 1 heat oven to 375.
  • 2 in a large bowl, whisk together eggs, milk, thyme, salt, pepper and nutmeg until blended.
  • 3 stir in spinach, cheese and bread with rubber spatula.
  • 4 pour into 13x9 baking dish.
  • 5 bake 20-25 minutes, or until browned and puffed and knife inserted comes out clean.
  • 6 remove from oven let stand 5 minutes before serving.
