Strawberry-banana Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 2 eggs
  • 1/4 cup cooking oil
  • 3/4 cup granulated sugar
  • 3/4 cup mashed strawberry
  • 1/2 cup mashed banana
  • 1 1/2 cups all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 350°f.
  • 2 in a large bowl, beat eggs until frothy.
  • 3 mix in oil, sugar, mashed strawberries and mashed bananas.
  • 4 in a separate bowl, combine flours, oats, baking powder, baking soda and salt.
  • 5 stir to mix thoroughly.
  • 6 add to wet ingredients.
  • 7 stir until moistened.
  • 8 turn into a greased 9x5x3-inch loaf pan.
  • 9 bake for 50- 60 minutes or until toothpick inserted in centre comes out clean.
  • 10 cool for 10 minutes then remove loaf from pan to cool completely on rack.
  • 11 wrap well and allow flavour to blend for at least one day.
