Savory Cranberry Stuffing Loaf

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • 4 tablespoons melted butter or 4 tablespoons oil
  • 1 medium onion, finely chopped
  • 3 stalks celery, finely chopped
  • 2/3 cup fresh cranberries, coarsely chopped
  • 1 3/4 cups orange juice or 1 3/4 cups broth or 1 3/4 cups water
  • 1 box seasoned cornbread stuffing mix

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 heat butter in large skillet.
  • 3 add onion and celery.
  • 4 cook on medium-high heat for a minute to soften vegetables.
  • 5 add cranberries and juice.
  • 6 bring to a boil.
  • 7 cover and lower heat to simmer for 3 minutes.
  • 8 remove from heat.
  • 9 add stuffing and mix well.
  • 10 pack stuffing into a well-greased leaf pan.
  • 11 cover and bake for about half an hour.
  • 12 for crisper top, remove cover and bake for additional 5 to 10 minutes.
