Spanish "french" Toast.

Ingredients

- 8 -12 slices of crusty baguette or 8 -12 slices ciabatta, style bread. at least a day old
- 2 cups milk
- 1/3 cup sugar
- 1/2 teaspoon lemon zest
- 1/2 teaspoon orange zest
- 2 tablespoons orange juice
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 2 eggs
- 1/2 cup butter, for frying
- 1/4 cup icing sugar
Recipe
- 1 if you are using ciabatta bread - 8 slices is the maximum.
- 2 in a saucepan, place the milk,sugar, zests, juices, vanilla and spices. simmer for 5-7 minutes (it will start to smell amazing!).
- 3 cool the mix for 5 minutes.
- 4 add the bread all at once and leave it there to soak up all that goodness, allow a good 20 minutes.
- 5 beat the eggs in a seperate bowl and in batches, carefully coat the bread.
- 6 in a large heavy based fry pan, add the butter (start with 2 tablespoons) and sizzle over a medium heat until fragrant.
- 7 add 6 - 8 slices of bread (depending on the size of your pan - don't over crowd it) and cook for 3-4 minutes each side. add more butter for each batch you make.
- 8 repeat until all the bread has been fried.
- 9 place the bread on a plate and sprinkle with icing sugar and serve warm.
