Strawberry Preserve Muffins!

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup light brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup i can't believe it's not butterâ® spread (melted)
  • 1/4 cup skim milk
  • 1 egg
  • 1/2 teaspoon vanilla
  • 4 ounces nonfat vanilla yogurt
  • 12 teaspoons strawberry preserves (set aside)

Recipe

  • 1 preheat oven to 400º.
  • 2 grease or spray muffin tins.
  • 3 combine the dry ingredients in a large bowl.
  • 4 melt butter.
  • 5 add the milk, then beat in the egg and vanilla.
  • 6 stir in the yogurt.
  • 7 add this mixture to the flour mixture until moistened.
  • 8 fill the muffin cups halfway.
  • 9 put 1 teaspoon of preserves in the center of each muffin cup.
  • 10 fill the cups with the remaining batter.
  • 11 bake at 400º for 15 minutes.
