Strawberry Preserve Muffins!

Ingredients
- 2 cups all-purpose flour
- 1/4 cup light brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup i can't believe it's not butterâ® spread (melted)
- 1/4 cup skim milk
- 1 egg
- 1/2 teaspoon vanilla
- 4 ounces nonfat vanilla yogurt
- 12 teaspoons strawberry preserves (set aside)
Recipe
- 1 preheat oven to 400º.
- 2 grease or spray muffin tins.
- 3 combine the dry ingredients in a large bowl.
- 4 melt butter.
- 5 add the milk, then beat in the egg and vanilla.
- 6 stir in the yogurt.
- 7 add this mixture to the flour mixture until moistened.
- 8 fill the muffin cups halfway.
- 9 put 1 teaspoon of preserves in the center of each muffin cup.
- 10 fill the cups with the remaining batter.
- 11 bake at 400º for 15 minutes.
