Stuffed French Toast

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 8 slices whole wheat bread
  • 2 large eggs
  • 1/2 cup half-and-half
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 ripe bananas
  • 4 tablespoons peanut butter
  • powdered sugar
  • strawberry (optional)
  • maple syrup (optional)

Recipe

  • 1 in a bowl whisk together your half and half, eggs, cinnamon and vanilla.
  • 2 slice your bananas into 8 pieces each, leaving you with 16 pieces.
  • 3 begin to spread about 1/2 tablespoon or more of peanut butter onto the 8 slices of bread and then top 4 of those slices with 4 pieces of the bananas each. assemble the sandwiches.
  • 4 now dredge your stuffed bread into the egg mixture.
  • 5 spray your pan with cooking spray.
  • 6 fry in a pan until golden brown & toasty.
  • 7 serve with powdered sugar on top and some strawberries and maple syrup if you choose!
