Special Squash Cornbread

Ingredients

  • Servings: 8
  • 3 yellow squash, grated
  • 4 eggs, beaten
  • 12 ounces cottage cheese
  • 1 (8 1/2 ounce) box jiffy cornbread mix
  • 1/2 cup margarine
  • onion, grated, to taste

Recipe

  • 1 mix all ingredients and pour into a greased 9 x 13" baking dish.
  • 2 bake at 350 degrees for 20 - 35 minutes until firm in the middle.
