The Siciliano Sandwich (roma Cafe Remake)

Ingredients
- 2 tablespoons breadcrumbs
- 8 slices italian bread
- 2 tablespoons parmesan cheese
- 4 slices provolone cheese, reduced fat
- 4 ounces eggplants
- 1/4 teaspoon italian seasoning
- cooking spray
- 1/4 tablespoon onion, chopped
- 8 ounces roasted red peppers
- 1 ounce fat-free mayonnaise
- 1 cup summer squash, sliced
- 3 tablespoons balsamic vinegar
Recipe
- 1 mix the bread crumbs, parmesan cheese, italian seasoning, onions and balsamic vinegar.
- 2 cover the eggplant and zucchini slices with mixture and grill lightly.
- 3 place slices on bottom slice of bread, top with provolone cheese and roasted peppers.
- 4 spread mayonnaise lightly on top slice of bread and cover.
