Spinach Noodle Pudding

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 8 ounces fine egg noodles
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces sour cream
  • 2 packages frozen creamed spinach, cook according to directions
  • 2 eggs, beaten
  • dry breadcrumbs (for topping)
  • 1/2-1 cup butter
  • salt
  • pepper

Recipe

  • 1 saute onions until golden in 1/2 stick of butter.
  • 2 toss in garlic and cook for additional 2 minutes.
  • 3 cook noodles according to directions on package.
  • 4 drain noodles and toss with the other 1/2 stick of butter and blend with the spinach, sour cream, sauteed onions and eggs.
  • 5 salt and pepper to your taste.
  • 6 mix well.
  • 7 pour into a buttered casserole dish and sprinkle with bread crumbs.
  • 8 bake at 350 degrees.
