Super-moist 100% Whole Wheat Banana Currant Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1/2 cup applesauce
  • 3/4 cup agave nectar
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 -3 mashed bananas
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup dried currant

Recipe

  • 1 preheat oven to 350°f
  • 2 spray a small loaf pan (9x5) with nonstick spray.
  • 3 using whisk attachment, mix apple sauce and agave nectar.
  • 4 add eggs, beating well.
  • 5 mix flour and baking soda together and add to apple sauce mixture.
  • 6 blend well with paddle attachment. add bananas, sour cream, vanilla, and currants. mix well.
  • 7 pour into loaf pan.
  • 8 bake about 1 hour. loaf will look very moist.
  • 9 remove loaf from pan and place on cooling rack.
