Super-moist 100% Whole Wheat Banana Currant Bread

Ingredients
- 1/2 cup applesauce
- 3/4 cup agave nectar
- 2 eggs
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 -3 mashed bananas
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup dried currant
Recipe
- 1 preheat oven to 350°f
- 2 spray a small loaf pan (9x5) with nonstick spray.
- 3 using whisk attachment, mix apple sauce and agave nectar.
- 4 add eggs, beating well.
- 5 mix flour and baking soda together and add to apple sauce mixture.
- 6 blend well with paddle attachment. add bananas, sour cream, vanilla, and currants. mix well.
- 7 pour into loaf pan.
- 8 bake about 1 hour. loaf will look very moist.
- 9 remove loaf from pan and place on cooling rack.
