Scalloped Potatoes - Stove Top

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 4 cups potatoes, peeled, 1 1/2-inch dice
  • 1/2 cup onion, diced
  • salt, to taste
  • 1 1/2 cups milk
  • 4 ounces cream cheese
  • 1 -2 pinch cayenne pepper
  • 1 cup cheddar cheese, shredded
  • 1/4 cup seasoned bread crumbs

Recipe

  • 1 put the potatoes, onions, salt and milk into a cast iron skillet (any heavy skillet should work).
  • 2 simmer covered for about 40 minutes or until you can easily poke with a fork. be sure to stir or your milk will burn!
  • 3 mix in cream cheese and cayenne in until incorporated.
  • 4 sprinkle over the top with cheddar cheese and bread crumbs.
  • 5 cover for 10-15 more minutes until the cheese in melted over the top.
