Scalloped Potatoes - Stove Top

Ingredients
- Servings: 4
- 4 cups potatoes, peeled, 1 1/2-inch dice
- 1/2 cup onion, diced
- salt, to taste
- 1 1/2 cups milk
- 4 ounces cream cheese
- 1 -2 pinch cayenne pepper
- 1 cup cheddar cheese, shredded
- 1/4 cup seasoned bread crumbs
Recipe
- 1 put the potatoes, onions, salt and milk into a cast iron skillet (any heavy skillet should work).
- 2 simmer covered for about 40 minutes or until you can easily poke with a fork. be sure to stir or your milk will burn!
- 3 mix in cream cheese and cayenne in until incorporated.
- 4 sprinkle over the top with cheddar cheese and bread crumbs.
- 5 cover for 10-15 more minutes until the cheese in melted over the top.
