Spicy Lamb With Pecans

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 12 ounces boneless lamb loin
  • 1 egg
  • 1 egg
  • 2 -3 tablespoons dijon mustard
  • 1/2 teaspoon ground red pepper
  • 1/2 cup dry breadcrumbs
  • 1/2 cup toasted ground pecans
  • 1/3 cup flour
  • 2 tablespoons oil

Recipe

  • 1 cut loin crosswise into 4 equal slices.
  • 2 pound between plastic wrap to 1/4 inch.
  • 3 beat together egg, , mustard, red pepper in shallow dish.
  • 4 mix bread crumbs& pecans together in second dish.
  • 5 coat each piece of lamb in flour, then egg, then crumb mixture.
  • 6 in a skillet over medium high heat cook until tender, turning once.
  • 7 about 6-8 minutes.
  • 8 serve topped with slices of your favorite chili pepper.
