Tapenade

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 1 chopped garlic clove
  • 2 cups black olives, pitted
  • 2 ounces anchovies, rinsed
  • 2 tablespoons capers, rinsed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil, first press

Recipe

  • 1 mix the first seven ingredients in a blender.
  • 2 gradually pour in the olive oil while the blender is mixing.
  • 3 continue until tapenade has pasty consistency.
  • 4 spread on pita bread,or stuff endive, or on grilled crusty bread.
