Thyme And Onion Muffins

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 1/4 teaspoon dried thyme (or dried sage)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup oat bran
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 large egg
  • 1 cup milk

Recipe

  • 1 melt butter in a small saucepan over medium heat.
  • 2 add in onion and cook 4-5 minutes, stirring several times until tender; remove from heat.
  • 3 crumble thyme leaves into the saucepan and stir into the butter.
  • 4 heat oven to 400°; grease muffin cups, or use foil or paper baking cups.
  • 5 thoroughly mix flour, oat bran, baking powder, salt, and pepper in a large bowl.
  • 6 beat egg in a small bowl; whisk in milk.
  • 7 add onion and herb mixture; pour over dry ingredients.
  • 8 mix gently with a rubber spatula, just until dry ingredients are moistened.
  • 9 scoop batter into muffin cups.
  • 10 bake 20-25 minutes, until tinged with brown and no longer damp in the center.
  • 11 cool in pans for 10 minutes before turning out onto a rack.
