Stonyfield's Zucchini Bread

Ingredients
- 3 eggs
- 2 cups sugar
- 1/3 cup oil
- 2 cups vanilla yogurt
- 2 teaspoons cinnamon
- 2 cups grated zucchini
- 3 cups flour
- 1 teaspoon salt
- 1 tablespoon baking soda
- 1/2 tablespoon baking powder
Recipe
- 1 preheat oven to 400 degrees.
- 2 beat eggs until foamy, then add sugar, oil, yogurt, cinnamon and zucchini and mix well.
- 3 in a separate bowl, sift together flour, salt, baking soda and baking powder.
- 4 add dry ingredients slowly into yogurt mixture and mix until moist.
- 5 pour into two greased and floured 9x5x13-inch loaf pans.
- 6 bake for 40-45 minutes. loaves should be golden brown on top when done.
