Three-grain Bread (bread Machine)

Total Time: 3 hrs 20 mins Preparation Time: 20 mins Cook Time: 3 hrs

Ingredients

  • 1 1/8 cups nonfat milk
  • 2 tablespoons sunflower oil or 2 tablespoons light olive oil
  • 2 tablespoons molasses
  • 1 3/4 cups bread flour
  • 1 cup whole wheat flour
  • 1/4 cup dark rye flour
  • 2 tablespoons yellow cornmeal or 2 tablespoons polenta
  • 1 tablespoon gluten, plus
  • 1 teaspoon gluten
  • 1 teaspoon salt
  • 2 teaspoons fast rise yeast (or 2 1/2 t. bread machine yeast)
  • 1 1/2 cups nonfat milk
  • 3 tablespoons sunflower oil or 3 tablespoons light olive oil
  • 3 tablespoons molasses
  • 2 1/4 cups bread flour
  • 1 1/4 cups whole wheat flour
  • 1/3 cup dark rye flour
  • 3 tablespoons yellow cornmeal or 3 tablespoons polenta
  • 1 tablespoon gluten, plus
  • 2 teaspoons gluten
  • 1 1/2 teaspoons salt
  • 2 1/2 teaspoons fast rise yeast (or 1 t. bread machine yeast)

Recipe

  • 1 add all ingredients to the pan according to the order in the manufacturer’s directions.
  • 2 set crust on medium and program for the whole wheat cycle; press start.
  • 3 when the baking cycle ends, immediately remove the bread from the pan and place on a rack.
  • 4 let cool to room temperature before slicing.
