Texas Caviar

Ingredients

  • Servings: 12
  • 2 (15 1/2 ounce) cans black-eyed peas
  • 1 teaspoon garlic, minced
  • 1 bunch cilantro, chopped
  • 1 cup green olives, chopped
  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 fresh tomatoes, chopped
  • 3 teaspoons vinegar
  • 2 teaspoons lime juice
  • 1 dash salt
  • 1 dash pepper

Recipe

  • 1 mix all ingredients in a bowl and serve with blue corn chips (although in our family we prefer to eat it on crispbread crackers)!
